Energy Bars

Ingredients

  • 1 cup dark raisins
  • 1/2 cup golden raisins
  • 1/3 cup butter or margarine (butter gives better flavor I think)
  • 1/2 cup granulated sugar or 1/3 cup your favorite honey (which will make them gooier)
  • 1 egg
  • 1 1/4 cup whole wheat flour
  • 1/4 cup toasted wheat germ
  • 1/2 cup molasses
  • 1/2 cup nonfat dry milk
  • 1 cup sliced almonds (optional)
  • 1 cup quick cooking oats
  • 1/2 cup skim milk
  • 1/2 tsp ground ginger
  • 1/2 tsp table salt
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder

Directions

  1. Chop raisins (using a food processor)
  2. Cream (do not melt the butter) butter, sugar, molasses and egg.
  3. Combine flour, dry milk, wheat germ, baking powder, baking soda,salt and ginger.
  1. Blend into creamed mixture with skim milk.
  2. Stir in oats, raisins, and half the almonds (if desired).
  3. Pour into greased 13x9x2 inch pan and spread evenly.
  4. Sprinkle with remaining almonds (if desired).
  5. Bake at 350 degrees for approx. 30 minutes.

Cool in pan and cut into 1×4 inch bars.  And if you like add some cocoa powder and spirulina mixed on top.  Mist with water and let dry
