My favorite chicken soup recipe, so far. My friend Bonnie shared this recipe with me and as you see she used turkey. Either way it is delicious!
Chicken and Green Rice Soup
1 (or more) smoked turkey pieces (I used a wing)
8 cups water
1 onion – small to medium
Couple stalks celery
6 or so cloves garlic whole
Bay leaf
1 chipotle pepper (these are smoked jalapenos – dried or in a can)
To taste with chicken base (I used the Better than Bouillion paste in the jar)
2 cups sliced carrots
1 cup diced onion
More garlic cloves
8 ounces tomatillo sauce (mild)
1 cup long grain rice
The pulled turkey
1 cup frozen corn kernals
Cook until turkey is falling off the bone. Strain the broth and pick through the stuff. Remove the chipotle. Put the onion, celery, and garlic into a food processor and mush it up. If you both like it spicier, mush the chipotle with the stuff in the blender. (I do this if it is just for me. I think it would be to hot (spicy) for Sooz.)
Put the broth back in the pan, add the green sauce and heat and add sliced carrots, more diced onion, I added more garlic cloves and cook until veggies crisp tender.
Add the stuff from the food processor.
Add about 1 cup long grain rice and cook until done.
Add pulled turkey.
Add corn.
Couple grinds of fresh pepper.
